Springtime Strawberry Salad

Thank heavens  for warm weather.

We’ve finally put our sweaters, heavy coats and long underwear away. We’re ready to be outside with the grill and our dog, just soaking in the sun. This salad will be a perfect compliment to those warm evenings ahead.

While a salad might be considered a little light for your average weeknight supper, it made a wonderful Sunday afternoon lunch with a glass of (organic, homemade) iced coffee. We think you’ll love it either way, but you could easily add some tofu or grilled chicken to up the protein factor.

Oh pssst, and this features some local, in-season ingredients, so the Earth thanks you.

Beef Stew

I thought for sure it was going to snow while we were in Michigan. I think I said as much every day we were there — it feels like snow!

If it had snowed, this would have been the perfect meal to cozy up with. Keep that in mind!

French Onion Soup

Is there anything better on the planet? Warm, crunchy bread, under a layer of cheese, all atop a steaming, thin broth and onions.

I think not.

Turns out, French onion soup is super easy to make. It’s a little time consuming, but most of that is hands-off time. Gather up your ingredients, pick a weekend to do this, and let’s go.

Warm and gooey. Perfect for winter.

Feaston’s Classic Meatloaf

Does there exist a better comfort food? I think not.

Whether you like it topped with ketchup or doused in gravy, meatloaf is like a big ol’ hug for the soul. And as my niece once informed me, perhaps the best part of making meatloaf is eating the leftover meatloaf sandwiches.

Lentil, Frankfurter and Bacon Soup

A couple of months ago, after what felt like two years of eating sandwiches for lunch, we got frickin’ sick of meat on bread.

Now we plan ahead and make something on Sunday to pack for lunch all week long. It’s waaaay better than the same-old, same-old sandwich.

Our latest creation is a soup that had some interesting ingredients. You will probably call it Hot Dog Soup. We’re okay with that.
