Beef Stew

I thought for sure it was going to snow while we were in Michigan. I think I said as much every day we were there — it feels like snow!

If it had snowed, this would have been the perfect meal to cozy up with. Keep that in mind!

Chunky beef stew really warms you up on cold days.

You will need:

  • 2 lbs. stew meat (this feeds a small army)
  • 2 Tbsp. oil
  • 5 carrots, chopped
  • 5 red potatoes, chopped
  • 1 medium onion, diced
  • 2 c. beef broth
  • 1/2 c. brewed coffee
  • Worcestershire sauce (a few shakes)
  • 2 tsp. garlic powder
  • 2 bay leaves
  • 1 Tbsp. sugar
  • 2 tsp. salt
  • 1 tsp. paprika
  • 1 tsp. pepper
  • 1/2 tsp. allspice

First, salt and pepper the meat, then heat up the oil in a large skillet. Brown the meat, then transfer to a Crock Pot with carrots, potatoes and onion. Add beef broth, coffee and remaining ingredients to the slow cooker and cook on low while you’re out working or shoveling snow.

When you return, about 8 hours later, thicken the sauce with flour and water, and serve your stew with warm, crusty bread.
