BBQ Chicken Pizza: A leftover remix

This tale marks the finale of my chicken evolution, something that I will be telling in full one of these days. But here’s the condensed version: I started out buying pre-cooked chicken strips, then I switched to packs of chicken breasts, then to value packs of breasts. Now, I am on to just roasting the whole chicken.

At our local Wegman’s, whole chickens go for $.79 a pound. It’s a steal compared to the other options. I buy ’em, cook ’em and freeze the leftovers. Fiscally, it’s the best option.

Anyway, the chicken I used on this pizza was frozen a couple of weeks ago and I wanted to do something with it. I took a handful of ingredients I keep on hand and voila: BBQ Chicken Pizza.

This is topped with mozzarella and cheddar cheese and cilantro.

Pasta Primavera

Internet, it’s been a long week of eating. After stuffing our faces full of rich Christmas food and cookies, we decided we were ready for some veggies. So, we paired some of our favorite veggies with our favorite food: Pasta.

Tonight we are feasting on veggie primavera. If you’ve been at Christmas parties and had family gatherings over the last week or so, this meal will be a welcome refreshment to your body.

It’s light, low fat and packed full of things that are good for you — like omega oils and vitamins.

Double Chocolate Peppermint Cupcakes

I have to admit this up front – this recipe made just over 2 dozen cupcakes, and I found myself with quite a few leftover. Which saddened me, because I thought these cupcakes were A-MAZING! Too bad for everyone else – you missed out. I ended up eating all the leftovers. I now have the gut to prove it.

This recipe is adapted from something I found in Kraft Food and Family – a good place for inspiration, but I don’t recommend making their recipes verbatim. Check with Feaston first!

Thirsty Thursday: Mexican Hot Chocolate

Internet, are you feeling the holiday cheer? Are you living your White Christmas dreams? Are you preparing to roast chestnuts on an open fire? We have a cocktail for you!

The inspiration for this little cocktail was actually Michelle’s niece, who likes a sprinkle of cinnamon on her hot chocolate. We, of course, dressed it up from there and gave it a bit of grown-up flare.

Sweets Week: Chocolate Chocolate Chip Cookies, a.k.a. Redemption

Well, your cooks learned their lesson. If you’re going to make a chocolate cookie, just make chocolate chip! The beauty of a chocolate chocolate chip cookie is that you can take your well-established recipe, the one you’ve made 1,000 times before, and all you have to do is add 1/3 cup of cocoa. Seriously. It doesn’t get any easier than that.
