Peanut Butter Cookies

Makes about 3 dozen cookies

  • 1 cup (two sticks) of unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 brown sugar
  • 2 eggs
  • 2 1/4 cup all purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 cup creamy peanut butter
  • 1 tsp. vanilla extract
  • Additional granulated sugar for coating

Preheat oven to 375 degrees.

In a large mixing bowl, cream together butter with sugars. Add eggs, one at a time, until fully incorporated.

In a seperate bowl, mix flour, salt and baking soda. Gradually add to butter mixture until fully incorporated.

Add peanut butter and vanilla extract and beat until all is combined.

Measure dough by rounded teaspoon and roll into balls. Dip into extra granulated sugar and place on ungreased baking sheet. Press down on dough with a fork, forming a cross-hatch pattern.

Bake for 10 minutes. Allow cookies to cool slightly before removing to a wire rack or clean countertop to cool completely.
