Hearts of Palm Salad

What the hell is a heart of palm? Ummmmm …. awesome!

It has the taste of an artichoke heart but with the texture of asparagus. It comes in a can, so you don’t have to worry about preparation. And it makes an easy, tasty salad that is a sure-fire crowd pleaser.

We were interested in the so-called Heart of Palm. It was pretty tasty. Try it!

For starters, find yourself a can of hearts of palm. It’ll be with the other vegetable cans.

Open the can, dump out the contents into a colander and rinse well.

Next, slice the hearts into bite-size pieces (on an angle, if you want to be fancy about it).

Slice up two well-ripened tomatoes (we used one red and one yellow because we are fancy like that).

Finally, slice an avocado into bite-size pieces.

Dump all the ingredients onto a plate or into a bowl and season generously with salt and pepper.

Spice it up with a little S and P.

Add a splash of orange juice, the juice of one lime and a good drizzle of olive oil.

Take a load off. Don’t you think you’ve earned it?

This is great all on its lonesome, or with some spicy as the star of dinner.
