You may have heard us mention buffalo chicken nachos from time to time on this site.
They are Feaston’s happy food. It’s the best sort of junk food.
So let me pause and do a little dance. You will soon do one too, because if you make these, you will happy dance in your chair. Or around the kitchen. And your dinner companions will happy dance too. These nachos have that effect on people.
Now these are stupid easy to make. You’ll need some corn tortilla chips, celery, leftover shredded chicken, buffalo sauce (we like this one, but if you find yourself at Target, try their Archer Farms Buffalo Blue Cheese Dipping Sauce – it is excellent), half a small onion, cheese and light sour cream.

Since there isn’t a lot of technical work involved, we’re going to illustrate this recipe in photos.
Makes 2 pig-sized servings
- 2 generous handfuls of corn tortilla chips
- 2 stalks of celery, diced
- 1 small onion, diced
- 1 1/2 cups cooked chicken
- 1/2 cup hot sauce, or enough to cover chicken
- 1 cup shredded cheddar or Mexican blend cheese
- light sour cream for dipping
Preheat oven to 350 degrees.
Spread tortilla chips out in a single layer on a baking sheet. In a bowl, dice chicken into bite-sized pieces and cover with hot sauce. Mix thoroughly. Top tortilla chips with chicken.
Next, add diced celery and onion on top of the chicken. Cover all with cheese.
Place nachos in oven and cook for 10 minutes or until cheese is melted and chips are lightly browned. Serve immediately with sour cream for dipping.
